Pot of Greed
A field-tested nutrient vessel overflowing with flavor and intention.
Ingredients
- 450 g chicken strips (honey-marinated)
- 200 g bacon cubes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 300 g frozen mixed vegetables
- 300 g rice (rinsed)
- 550 ml water
- 1 chicken broth cube
- 2 tbsp soy sauce
- 1 tsp black pepper
- 1 tsp dried paprika powder
- 1 tsp dried chili powder (optional)
- 2 tsp curry powder (optional)
- pinch of dried oregano
Procedure
- Heat pot. Add bacon, cook until fat renders and edges brown.
- Add onion and garlic, saute until translucent.
- Add spicies, stir briefly.
- Add chicken, sear until lightly caramelized
- Add frozen vegetables, stir 2-3 minutes.
- Add rice, mix well to coat in fats and seasonings.
- Add water, broth cube, and soy sauce. Stir once.
- Cover, simmer low 18-25 minutes until rice is tender and liquid absorbed.
- Add oregano.
- Rest covered for 5 minutes.
Notes
- Used a large ceramic plated cooking plot (4 L)
- Stir at step 8 if needed (it shouldn't be)
